Hi Wendy,
The food looks awesome, the workouts too! Some time ago, I found a recipe for a raw tart, that looks good. Didn 't try it yet though.
Enjoy your weekend!

Rosemary Lemon Maple Chicken with Pasta and Rice
juice 5-6 meyer lemons (depending on juiciness)
add 2-3 tbsp snipped fresh rosemary
1/4 cup or so real vermont maple syrup
add some finely ground white pepper
add some sea salt to taste
prepare 1 cup of red himalayan rice according to package (prepare slightly underdone).
prepare 8 oz of black squid ink spaghettoni according to package (prepare slightly underdone) (break into bite size pieces prior to cooking).
pound 2 pounds of organic free range chicken breast into thin pieces, then cut into bite size pieces.
heat 2 tbsp of olive oil in a large saute pan. pan sear chicken and remove from pan. deglaze with 1/2 cup white wine (I used a non-oak chardonnay). add lemon mixture, boil and reduce sauce, stirring constantly. thicken with a bit of arrowroot if needed.
add rice and pasta and stir briefly. add chicken. serve over greens of choice, garnish with crushed macadmia nuts on top, nasturtiums and lemon slices around dish. serves 6-8.

I created this dish last night as a nod to my redneck heritage--memories of rice-a-a roni! maybe I will do hamburger helper next. kidding aside, my friend jay has rosemary, meyer lemon, and nasturtiums growing in his front yard. and he gave me the squid ink pasta and red rice as gifts, so this dish is for you jay

oh, and I do love to present food. the lemons and nasturtiums were pretty--I cut the lemons into lemon flowers by scoring the edges. I promise I will start posting pictures!!! the way I have been eating, the food pics will be a universe better than my progress pics, lol

LOL!!!! Doesn't it feel great to get your ass kicked in the gym. I am on day 4 of my rest period from a week of ass kicking and I am ready as hell to go back in and do it all over again. I'm almost looking forward to walking around all stiff again.
Hmmmm.... Stage 2 sounds like a lot more fun than stage 1. I bet with time they become much easier. You are doing a lot of new things here so you will naturally have to focus more on form than weights for a time or two.

hey toni, let me know what you think of the chicken. lol @ cuban snatch. a female trainer and her female client and I were all loudly having a yuk about that in the gym.
on a related note, we were also laughing about something that happened to one of my friends-- you know those little dove promise chocolates that have the sayings inside? well a letter was missing on his. the phrase said "count the stars" except his was missing the O--just flat out missing.

never underestimate the power of the snatch.
speaking of which, the cuban snatch was the exercise that I caught a glimpse of myself doing in the mirror. my arms and shoulders looked HYOOOGE. kind of scared myself, actually. wondering if someone has been slipping roids in my wine.....
