Karla, I did try some of your cottage cheese "ice cream" last week. It wasn't the same as the real thing (as I already knew), but it worked in a pinch. The kids wouldn't eat it, but they don't eat cottage cheese unless it's well-hidden in something else anyway.
I'm interested to find out what route you take with your training and how the big baking contest goes.

Great job and exciting news for you. It proves that with hard work and consistency all things are possible. Even a future change of careers. If not now maybe years down the road.

I don't do much training these days, as my current job is more disease/rehab and wellness programming oriented (I work for a medical fitness center owned by a hospital). I end up doing a few assessments and exercise programs here and there, and I've kept my PT cert current, but I just don't have time to do any significant personal training "on the side" of my real job right now. To get into the field, I went back to school for my master's degree (already had one in a different field - this was my 2nd and LAST journey back to school  ) because I wanted to make fitness and wellness my career, not "just" a hobby... but you certainly wouldn't have to get a master's to become a trainer, since you already have a career you love!
It can be so rewarding, and you have a passion for it... PM me if you want to talk more about it

Hi Karla, I have been reading a little of your posts re: becoming a trainer. Just based on the advice and knowledge you give on this forum I would think you would make an excellent trainer. You seem to have a passion for it and would be inspiring to others. Just my two cents. Also, it must be so rewarding to love what you see in the mirror! Congrats

Fruit & Nut Bars
Moist and chewy with a hint of sweetness and my favourite - dried sour cherries. Now the ones I used don't have any sugar added, however, the calorie count I used is from a commercially available cherry (which uses cane sugar). I suppose people will substitute the fruits and nuts they have and/or enjoy more. I added a sweetener (dulce de leche) but with sweeter dried fruit you could probably drop it.
Cals (per 2"x4" bar): 203 (10g protein, 7g fat, 27g carbs, 5g fiber)

I think from a grab and go perspective these are a better choice. The oat scones are also good, but I still find them an acquired taste. I suspect in the end I'll make more of these (just love putting the dried cherries in things). I'm still thinking on the muffin....

I love the dried sour cherries too. I have a bunch that don't have any sugar on them, so that would be a great way to use some before they go bad! I like to put them in my 0% fage with some honey. Very tasty!

If you have room in the fridge they shouldn't go bad (assuming they're well dried). I thought I was out from last year's batch and found a small amount today when I was taking the other ones back. I've only ever had problems with dried tomatoes (my fault, since they were too big to dry, took too long, I had problems in the dehydrator). I still tend to package them in smaller amounts just in case though.

Real quick post here (gotta practice my guitar and then REST)
AM workout = 40 min fast bike ride
PM workout = 30 min walk withh Sherman through the sour cherry orchard. Yes I ate a bunch straight from the trees! I don't know what the cals on that would be but since I stole them I think they are zero.

I was in "Harry & David's" yesterday, and the saleslady saw me reading labels on snax (ALL bad - didn't buy any!) and said "everything we sell is 100% calorie-free" - LOL!!!

I generally think 'not worth it' instead of bad. I'm going to meet people for lunch on Saturday and found the menu of where we're meeting online. I did find something that sounds good (beef provolone panini - 450), however, I think they're more well known for their sweet stuff. I looked out of curiosity since I'm not interested in having any. The cakes range from 390 (strawberry shortcake) to 1000 (chocolate cake). I think even if I was eating maintenance I wouldn't consider 1000 calories worth it for a single piece of cake.
If I do decide to have something sweet (will let my mood decide) I might try a lemon tart (220), but I suspect it will be too sweet for my tastes so I'm probably better leaving it be.
