If I had comparisons from this week's picture to the first one you'd be even more impressed ... Leigh is a genius!!

Finally slept great last night ... still tired today but it could be from the dreary weather. Busy day ... gymnastics for the girls, then to my doctor ... and to Matt's psychiatrist this late afternoon. I'm hoping to get a nap in somewhere. And I've got my VCR set to tape LOST tonight!!

Thanks guys!

The show last night was very good ... it was a little weird having Tim Neeley as Jesus because he's not a young man ... but the music was excellent! Dinner was fab too, but of course the thing I picked out on the online menu ahead of time wasn't on the menu!! I think I did okay anyway ... grilled scallops with pea sauce, risotto with eggplant caviar ... a side salad with dressing on the side (fork tines dipped when needed) ... and finished with a little bit of freshly made raspberry sorbet! Mmmmmm ...

But back to the diet today ...

Off to see my first T-ball game this morning ... I'm bringing the video camera ... should be funny!!

IDK Roland ... it looked and tasted like fresh green peas pureed to a smooth sauce. Not cream or fat laden though ... it was more delicate. Delicious. With some garlic I would guess but not much of anything else based upon taste. Beautiful deep spring green color.

The eggplant "caviar" was roasted eggplant and roasted red peppers in a finely chopped sauce with garlic and other spices. Delicious.

The risotto was nice and creamy ... with onions, edamame, and parmesean. Mmmmm.

The scallops were grilled with some sort of pepper seasoning on them. They had a bit of a kick to them, which was nicely balanced by the risotto.

And I won't even describe the sorbet ... my mouth waters just thinking about it!!
