Question

I have heard that changing number of sets/reps can provide enough variation to spur muscle growth. Say I've been doing 4x5 for squat and bench. If I change it to 7x3, using heavier weight, will this be enough variation to help me keep on growing? Thanks for any help.

Yup.

Variation is a key element in regards to hypertrophy training. At that rep range you'll also gain a great deal of strength.

As always remember to reduce the volume load and vary you exercises after a few weeks to allow adaptations to occur.
