this is something that I have wondered for quite some time. In the gym, there are various bar thicknesses. How does that impact your workout? for instance, everyone seems to avoid the thicker bars when doing bench press why is that? what are the biomechanical implications? what is the physiology etc?

A thicker bar taxes your grip more so its harder to hold the same amount weight when the bar thickness varies.

Using them is dependent on your goals, as is everything else.
