I typically do 50%, 75%, and 90% of the load I'm going to use in the lift. For pullups/chinups, I'd take my weight + the extra weight and divide in half for the for 50% one and do about eight pulldowns at that weight. Four at 75% and one and 90%.
For dips, I do eight bench dips with feet elevated, then using the same system as above, do four 75% dips (usually just my body weight), then I skip the 90% one (too lazy to drag one dumbell over to the dip station just for one rep).
If you're just doing body weight dips, you could do eight bench dips with your feet on the floor, then four with your feet elevated to the same level as your body, then normal dips.
