Gq, would that be a compound exercise? Because if it is it would ok then. Right???

Well it takes many muscles moving to make you smile, so Im sure it takes a few to move your chin. So yeah, its a compound exercise.

If it's a twice a week workout, should we go for 10 x 3 on the Monday for strength/hypertrophy, and then 3 x 15 on the Thursday for endurance?
And what about diet? Will I overtrain if I eat while on such a program?
