Does anyone know of any plyometric-type exercises aside from sprinting that would target the hamstring muscles?
My reason for implementing plyometric hamstring work is to maintain balance in my speed-strength work as my hips and quads get plenty of stimulation from doing burpees, squat jumps, and sprints.
Any suggestions?

How about Jumping King Deadlifts? Simply do a typical KDL, adding the leap at the end, landing on two feet instead of just the one (for impact). BUUUURNS!!!
Snatches, Reverse-Hyper Extension, Kip-ups(those things they do in kung-fu movies when they are laying on their back, and throw their legs into the air and land on their feet, those are mostly hip snap)
BTW, You are getting lots of hamstring work from your sprinting and squat jumps as well.

Well I think if you are doing any type of hill sprinting and maybe even running bleachers etc. you should be fine.
