Default your size and squats!!

I've been woking out with a while now and ive seen dramatic improvements in my size and strength. I do firefighting for a living so its important for me to stay strong and healthy for obvious reason! at the same time, i dont wanna be a no neck super huge collosas. i gradually move up in weights in my workouts as is natural but i was wondering, when your happy with what you have do you stop adding more weight and maintain a certain weight on the equipment? or should i just keep going by adding more weight?

Also with squats, i was doing those the other day and it was quite sore around my neck, however by shifting it ever slow slightly down lower it got more comfortable. when i did the squats it really felt the burn on my hamstrings is that normal or maybe i was just doing it wrong all along?

any info would be gladly appreciated
