Default Pizza Chicken

When I have a taste for Pizza I make this (sooooo Gooood)

Basket of sliced mushrooms
onion sliced in 1/4 inch slices
Chicken tenderloins (about four or five in the pack)
pepperoni
can of diced tomatoes
shredded mozzarella cheese

use a large frying pan heat about 2 tbps of olive oil give or take and a pat of butter for flavor...brown your mushroons (i like mine real brown)I add garlic salt to them and remove to a plate then brown onion slices (i like mine a little crunchy) and remove to the plate then add your chicken tenderloins to the oil and butter in the pan let them cook for about 4 mins on each side until brown then i put lid on the pan and let them cook thru about another 1-2mins then you add the mushroons and onions on top of the chicken (of course season with salt and pepper and garlic) add as many pepperoni as you like on top dump the can of diced tomatoes on top with juice and let the juices cook together to a bubble then top all of it with the mozzarella cheese put the lid on the pan and let the cheese melt. I eat maybe a fourth of this and then i save the rest in a tupperware container and eat all week. Its so good and satisfies my pizza craving plus very low in carbs you can also add bacon that you have already fried as a topping or any veggie you want as a topping . you can also use steak instead of chicken.

I love pizza chicken too. I make a Mexican version with black beans and peppers.

Interesting idea to mix the pepperoni and chicken, sounds good.

You're not using any dough? I might try that, but roll the mixture up in a whole wheat tortilla.

I didnt' realize TNT was a book. thought it meant "tried and true!" It's a low-carb plan I guess, hence the no crust.

I just made this and I must say it is AWESOME!! You are going to have to be careful with the portion size because I could have easily eaten half of this dish. The only thing I am going to do different next time is uses the entire basket of mushrooms (I saved some of them for my omelets) and uses my second biggest pan. The one I used was a little to big for this but once I added the tomatoes it turned out fine. Very very good recipe. It is one of my top three TNT recipes. It might even be first!! Thanks for sharing this.

I make this quite a bit.....I also do a mexican variation where I use salsa and chipotle cheddar cheese, which is really good, too.
