Default Anyone with recipes for squash?

I received a couple squash from a friend at work and although they told me how to cook it, I don't want to do it that way because it wasn't healthy at all. Does anyone have a suggestion of a way to cook it or add it to a recipe? Thanks.

Wow..... I have no idea. It looks like a cucumber enlarged on one end with the other end like a handle?????

I just cut them in half brush with olive oil and salt and put flat side down on the grill for 20 minutes rotating 45 degrees halfway through to get nice criss-cross grill marks.

sounds like crookneck


if the outside is soft (you can dent it with a fingernail) - treat it as a summer squash - look for recipes for zucchini or crookneck or pattypan. (if it is hard like a pumpkin it is a winter squash).

for summer squash, I agree - grilling or roasting are good. You can pan saute with a little garlic or onion too. Also good sprinkled with some parmesan when you are done.
you can also slice it up, mix with tomatoes, onions and some herbs and bake it up (or roast it on the grill in a foil pouch)

I slice mine into circles spray with olive oil, sprinkle with seasoning(garlic pepper is good), grill! Thinner cooks faster and gets crispier! Always a hit! Iv'e got them coming out my ears right now from mom,g'pa, g'pa in-law! I also slice them thin and steam them for lunches.

Grilling them is great....use seasonings and sauces. Or you could fry them with onions in a pan with onions. But I often cut them into chunks and steam them in steam bags with other veggies. I love em.

I found out that left-over steamed squash sliced up with some sliced onion, is a great addition to scrambled eggs.....same type texture and gives them a great taste.
