Default al fresco chicken sausage YUM!

Had to share my new find with you all! I can't tell you how many times I passed these by at my supermarket. They were stuck in with the organic chicken and I just didn't think about giving them a second look, but I wish I would have! They are my new favorites -- at least the Jalopeno Chicken Sausage is!! This is what I am talking about....not sure which grocery stores carry them, but I got them at Giant Eagle.

My recipe was as follows for 1 serving:

1 1/2 links of Jalopeno Chicken Sausage cut into slices
1/2 cup of chopped onion
1/2 cup (maybe more -- I just poured in) of medium chunky salsa
handful of shredded Chipotle Cheddar cheese

Put the chicken sausage slices and onion in a non stick skillet and fry up until the sausage starts to brown and the onion gets tender. Then toss in the salsa, heat thru. Top with the Chipotle Cheddar cheese. Melt.

This is SPICY, SPICY, SPICY and GOOOOOOD!!!

I buy some really good ones now and then at Whole Foods, they usually have 5 or 6 different varieties of chicken sausage.

Sam's carries some that I think have the Emeril Lagasse name on them. Bacon and pinapple chicken sausage, smoked mozzerella chicken sausage, a few others I can't think off. Looking at the al fresco ones I think they are probably the same but sold under a different brand name. A lot of the flavors look the same.

The ones I get at whole foods are raw, but the ones at Sam's are fully cooked. Either way I grill them and serve with sauted onions and peppers. Mmmm.
