Default Delicious macaroons!

We stole the recipe from epicurean.com and low-carbed it. (we also halved it and got 13 small macaroons). These are FANTASTIC and a very tasty treat with a lot of fiber to boot. Modified the recipe just a bit.

Coconut Macaroons Recipe

Ingredients:
2 egg whites
1 tsp vanilla extract
1/2 tsp salt
1 cup splenda
2 cups shredded unsweetened coconut


Directions:
Preheat oven to 325

Beat egg whites until stiff. Gradually beat in vanilla, salt, and sugar, one tablespoon at a time. Fold in coconut. Drop by teaspoons onto parchment paper or silpat on a cookie sheet. Bake about 17 minutes, or till golden.

Thanks DM, I made these last night and they are SOOOO good.....not good once cold but I just keep reheating them and eating! Oh, and it's weird bc I really really do not like coconut so I was surprised I would like these.

I was finding these a bit dry myself so switched it up and used whole eggs instead of just the whites ... I know, not traditional macaroons but they were moister and still very good. A nice variation if you want to try it out. (You need to use more coconut however because the yolks add a fair amount of extra moisture.)
