We stole the recipe from epicurean.com and low-carbed it. (we also halved it and got 13 small macaroons). These are FANTASTIC and a very tasty treat with a lot of fiber to boot.

Modified the recipe just a bit.
Coconut Macaroons Recipe
Ingredients:
2 egg whites
1 tsp vanilla extract
1/2 tsp salt
1 cup splenda
2 cups shredded unsweetened coconut
Directions:
Preheat oven to 325
Beat egg whites until stiff. Gradually beat in vanilla, salt, and sugar, one tablespoon at a time. Fold in coconut. Drop by teaspoons onto parchment paper or silpat on a cookie sheet. Bake about 17 minutes, or till golden.
