Default TNT Almond Chicken

Made it right from the book. I had a little trouble getting the almonds/ cheese crumbs to stick, but overall was a pretty tasty dinner. I took the left over egg, and crumbs and made a "cookie" out of it and had it for breakfast.

I am will count that as my serving of nuts for the day.

I also baked a bunch of pepperoni for snacking. Since carrots are out, and chips. They provide a nice crunch and lots of flavor.

I'm a big fan of this one too. I accidentally left the cheese out the first time and I liked it so I've done it that way since.

Fish is good the same way. Flax seeds and macadamias also work well.

what do american people mean with pepperoni? is it like salami??
curious because i see this often in recipes

Hey guys, I'm new here and this sounds really delicious. I don't have the book, so do can you guys post the recipe? I want to try it out because all my meals are getting old. I look forward to reading on.

there's about a million almond chicken recipes. I use a very sharp knife and thin slice a half chicken breast into about 3 (more or less) slices, and pound them if I remember. It doesn't seem to make much difference. Then 'bread' them with almond flour and grated Parmisan mixture. You have to press the mixture into the chicken. Fried in olive oil, temp kind of fussy, on my range 7 not high enough, 8 too high. I've done this for years.

It's like a chorizo/salami hybrid. It is by far the most common dry sausage in the US; I am not sure why.
