Default Broccoli Cheddar soup

We had a bunch of broccoli left over (we bought a giant bag of it at costco) and I was wondering what to do with it.

So, I boiled it up in a pot (maybe about 6 cups?), with a couple cups of chicken broth (just enough to come up to about 1" under the pile of broccoli), until it was mushy. It made me sad to cook the broccoli to death but I got over it. I then took an immersion blender to the pot & whirred it until there were no chunks of broccoli left. Took about 3 minutes or so. Then I added about a cup of of shredded sharp cheddar and about 2/3 cup heavy cream. Added some salt & pepper and let it cook for a little bit.

It was fantastic. Sorry I don't have specific measurements, but this was so easy to make and easy to adjust to taste - I am not sure the measurements really matter that much. We got 2 dinners and 2 lunches out of it (so, 8 bowls of soup total) so it made quite a bit. The sharp cheddar really added a nice contrast to the flavor of the broccoli. A bit of fresh grated nutmeg might have been a nice touch.

DM - that sounds great. I have commented somewhere that broccoli can be at least three vegetables, raw, French style and stir fried, and cooked Italian style until it isn't bright green. My Broccoli Cheddar never quite worked. Now I will try again. Thanks
