Default Taco Skillet

I made this last night and it was really good! And, great for leftovers to take to work.

TACO SKILLET

2 pounds ground beef
1 medium onion, chopped, 4 ounces
2 cloves garlic, minced
3 tablespoons Taco Seasoning (lowest carbs you can find or make your own)
14.5 ounce can diced tomatoes, undrained
16 ounces coleslaw mix or shredded cabbage
Salt, to taste
4 ounces sharp cheddar cheese, shredded
6 tablespoons sour cream, optional
Cilantro, optional

Brown the meat with the onion and garlic in a large skillet; drain the grease. Add the seasoning and tomatoes. Simmer, uncovered, 5 minutes. Add the cabbage and cook, uncovered, 5 minutes, stirring occasionally. Add salt to taste, if needed. Sprinkle the cheese over the top, cover and cook 2 minutes until the cheese melts. Stir in the cheese. Top each serving with 1 tablespoon sour cream and a pinch of cilantro, if you like.

MY CHANGES: I used a littles less than 2 lbs of beef because that's what I had. I used one can of Rotel tomatoes and one can of regular chopped tomatoes because I felt it needed more tomatoes. I used a monterey-jack blend for my cheese. I did use the sour cream.

I've found that most taco seasonings are pretty low carb to begin with.

I think I had Old El Paso last time and it has zero carbs and zero trans fats. I'll find it at the grocery store to be sure.

If you find one with zero carbs, let me know! I looked at them the other day and they were all fairly high...some 4g per serving.

I just found a recipe online and made my own.

Yeah, I just usually cook the ground beef then toss in random amounts of ground cumin, ground coriander, chili powder, cayenne, salt, and sometimes oregano. Cheap and easy, just the way I like it.

We've always just used lettuce & done taco salads with this sort of ingredients list, but the cabbage is something I've never thought of! It sounds really good; we'll have to do that.

the problem with tacos seasoning is that the texture is greatlt improved with just a little bit of starch thickening

For me, I decided that a little cornstarch against the whole batch of say burrito filling is an amount of per serving carbs that I can tolerate - with something like xanthan you'd probably do even better.

Jane, I was wrong about zero carbs, but I'm not really carbophobic either. Now, this is 3g carbs/2tbsp dry mix. I'd have to physically measure to find out how many tbsp are in a packet, but I don't think it's a whole lot.

This is a thread I started a while back looking for a good recipe to use for taco lettuce wraps.

Jane-

I made this last night and we were in awe. Every bite we took we just kept looking at each other saying OMG this is good! I served it with a tortilla for my lifting day and I am having it plain for lunch today. The cabbage (I used coleslaw mix) made it so good!

Great, Leah!! I am so glad you liked it!

I, on the other hand, am so upset because the last meal I had before I got the god-awful stomach virus from hell was that meal. So, of course, it will be awhile before I can face it again. And, it was SO good!!

Thankfully, today I am feeling normal again after 5 days of crap. My appetite is back, and I'm sure before long it will all be a distant memory and I'll be able to throw "taco Skillet" back into the playlist!

I guess I've been in a mexican mood lately because the same week I made the taco skillet I also made a chicken dish that I REALLY liked a lot! I seasoned boneless chicken breasts with taco seasoning on both sides and put them on a baking sheet. Then, I topped the chicken with salsa and chopped green onions and baked for about 30 minutes. Topped them with cheese and baked til melted. This was really good, too! I used a bit of sour cream for a garnish, too. MMMM....guess my appetite IS coming back!

This was great! I made it last night and had some of the leftovers for lunch today. I was a little skeptical about the cabbage (I guess because it's not something I ever cook or use) but it was so good. I made half the recipe but used a full can of diced tomatoes with green chiles. I used pepper jack cheese and just approximated taco seasoning spices.

I made the taco skillet tonight and man was it good. I didn't have enough taco seasoning so I made DirtyMartini's recipe and it flavored it up quite nicely. This recipe and taco season mix is defiantly a keeper!! Thanks for posting it!!
