Default my wife's chicken

last night my wife made the most delicious chicken. its low carb and absolutely wonderful. sorry i don't know the exact measurements of things since she was just experimenting but it is really easy to make.

it was chicken breast topped with spinach and then on top of that was cream cheese then wrap the whole thing with bacon and bake it (sorry i am not sure how long). after it was cooked she broiled it for maybe a minute just to make the bacon nice and crispy. but the bacon helps trap the moisture of the chicken and all fo the flavors kind of just blend together. i am actually getting hungry thinking about it. anyway, i took it one step further and put a little bit of creamy ranch on the side to dip it in but i was careful to only have 1 servings worth of ranch since it had 2 cards per serving. we had a side of steamed broccoli with this. it was a great meal.

just experiment with the measurements if you are interested in trying it out.

it did get melty but between the bed of spinach under it and the bacon over it stayed there. it gives the whole thing an interesting texture and flavor.
