Default TNT/Low Carb Spicy Rapid Roast Chicken

1 3-lb whole chicken
1 T olive oil
1/2 t salt
1/4 t black pepper
1/4 t dried oregano
1/4 t dried basil
1/4 t paprika
1/8 t cayenne pepper

Preheat oven to 450 degrees.

Rinse chicken thoroughly and dry. Put chicken in small baking pan. Rub with olive oil. Mix all the other ingredients together and sprinkle over chicken.

Roast the chicken in the oven for 20 minutes at 450 degrees. Lower the oven to 400 and continue roasting about 40 minutes or until the internal temp is 180 degrees. Cool 10-15 minutes.

I'll bet this would work pretty well with boneless chicken breast too. Sounds yummy. I'll have to give it a try.

If you want more exotic spices, try ras el hanout - an excellent blend from Morocco. I've tried it on roast chicken and it was really, really good.

Something I found humorous, it was Consumer Reports I think which found that the temperature of the oven, and not the expense of the chicken (ie Kosher, Free range, Organic) was the chief variant in determining how tasty the chicken was.

recommendations are all over the scoreboard on this. I settle for anything over 160 as done.
