Lightbulb Love eggs sunny side up?

but want an omlette so you can have veggies with it too?

Do you find that the thought of 3oz of spinach on the side of your sunny side up eggs makes you want to skip your morning veggies?

wait no longer....

after weeks of research and experimentation, I've developed the revolutionary sunny side up spinach omlette. For my favorite JPFitness friends, this recipe comes free of charge, with no spam and less than 20,000 words

recipe:
3oz baby spinach chopped and zapped in micro for about 1min to reduce volume (or sauted, but I find microwave easier)
chopped onion
chopped mushroom
2 eggs

mix 1 egg with the veggies. Pre-heat and grease pan (I use canola cooking spray, you pick your fav--butter, olive oil, etc). When pan is hot, add egg mixture and spread like an omlette. Crack 2nd egg on top. Carefully integrate whites of 2nd egg into omlette, just enough to keep it from sliding off when you flip it. When cooked on bottom, flip, cook, and enjoy

PS you really need to use the whole egg for the sunny side up. I tried mixing 1 egg + the whites of the other but the yolk doesn't fare as well without that slight layer of white on top.

Cool idea. Sort of like eggs Florentine without the bread/English muffin. Maybe call it "Eggs Cappuccino"?

hmmm, will have to work on the name. I tried poaching them too, but with no good luck. I tend to like the texture from the saute too.

I thought sunny side up didn't involve flipping the eggs?

Actually with sunny side you can flip them - over easy. Enough to set the yolk but not long enough to kill it. Some places will do sunny side up so the more cooked (hence brown) side of the egg is down but the white side is up. Other places won't flip them at all (I cover mine with lid for a couple of minutes to set them).

Well there ya go. I have always cooked sunny side up with the lid method, and considered flipping them "over easy".

If you use the lid method, the yolk clouds over, and it's no longer "sunny." Perhaps you could call that a partly cloudy egg or partly sunny, if you are a half-full type of guy.

Perhaps it's been too long since you've seen the sun.



This is an egg. See how it's reminiscent of the sun?

Thank you Captain Obvious. What would we do without you?

Don't leave the lid on forever....hover it over the pan to help set the yoke. Speaking eggs, I think I'll make some cheddar cheese grits with shrimp then put an egg over the top.
