I came home to a real treat today. One thing I really miss since I have been on this diet is cookies. Particularly peanut butter cookies which are my favorite. Well my wife has come up with a recipe that I can eat and it is so yummy I just had to share it with all of you:
1 cup natural peanut butter (smooth or crunchy)
1 cup splenda
1 egg.
Melt peanut butter in the microwave (about 30-45 seconds). Combine with splenda and egg. Form into one inch balls and place on a cookie sheet. Slightly flatten the balls with a fork. Bake about 15 - 20 minutes at 350.
Great recipe. I made them last night, awesome, they taste just like my mom's used to (except she put sugar on the top, and that's not happening in my kitchen!). Thanks JP, good stuff!

I'm working on a muffin recipe which is pretty much the above with ground oats. The Macro is about 34/33/33 and they're pretty darn good. Just tweaking it still.
They are definitely beautiful in their simplicity. There is nothing worse than having to spend hours mixing together hundreds of ingredients. Props to Erika!
These cookies are pretty good, may have to eat all of them... So much for Adam's Diet! Only thing, I need a couple cups of water per cookie, so that'll help stop me for eating them all. [img]tongue.gif[/img]
mqgeek, why do you say "so much for Adam's diet"? The very reason I posted this recipe is that it fits perfectly with his recommendations. Eat up, brother!
I wanted to experiment to see if I could up the protein a bit...
I made three "base" doughs and put it into 3 bowls.
Batch 1 I make one in the normal fashion.
Batch 2 I added 1 more egg and 3 tablespoons of vital wheat gluten flour. I let it "rest" for 20 minutes so that the gluten had a chance to absorb some moisture before rolling it.
Batch 3 I added more 1 more egg and 6 tablespoons of vital wheat gluten flour. I let it "rest" for 20 minutes so that the gluten had a chance to absorb some moisture before rolling it.
I tried to make all cookies about the same size for a better taste comparison. Because of the extra stuff, I was able to get 36 cookies out of batches 2 and 3, while batch 30 made 30 cookies.
At 350 degrees, all took about 15 minutes to cook to the best consistency in my oven. I tried some a little shorter and some longer, but 15 minutes kept them cooked yet not crumbly.
Batch 1 is decadent and hard to keep away from. They are almost like a candy!
Batch 3 tastes the most like a traditional peanut butter cookie. I might even press a couple of peanut halves into the top next time.
Batch 2, obviously is somewhere in between. It holds together a little better than the original, but doesn't really have the better qualities of either of the other ones.
I'll let my family taste them all later, to see what normal humans think of them.
Now, I've got to put them away before I eat even more of them and they become the lunch I should have had...
Forgot. Feel free to check the math, but here's the nutrition info.
Batch 1: Original PB Cookie
1 cup peanut butter
1 cup granulated Splenda
1 whole egg
Per cookie (1 of 30), 56 Calories, 2.7 Carb, 4.7g Fat, 2.1g Protein.
Batch 3: Original Extra Protien PB Cookie
1 cup peanut butter
1 cup granulated Splenda
2 whole eggs
6 tablespoons vital wheat gluten flour
Per cookie (1 of 36), 55 Calories, 2.5 Carb, 4.1g Fat, 2.9g Protein.
They aren't really significantly different, nutritionally, I know. I'd like to put in more gluten, but I'm afraid that they might be too cakey and dry.
wait wait one person said they got 12 cookies and another said he got 30.. thats a pretty big difference how big were all of your cookies?

I can't even try them, I know I'll be addicted. I love peanut butter so much that if I eat any I go on a peanut butter diet for days and end up gaining weight. I can't wait to find a good, fat free, low cal peanut butter...if it exhists.
Thanks a lot JP! Geez, why did you post this recipe???? I ended up eating the whole batch in less than 30 minutes. WOW, they were good. I only came out with 8 decent sized cookies. I just downed around 2000 calories and im going to bed in 30 minutes. I better eat clean the next week leading into Thanksgiving
I just tried these out, and yes, they are very good. I got about 16 2" round cookies out of the recipe. I would recommend 15 minutes as the max. Next time I'll start watching at about 13 minutes, since mine were a little dry at 15 minutes.
In regards to Adams Diet, I just considered 2 cookies as a nut serving. (16 Tbs of PB per cup, 2 Tbs per serving) So don't go too overboard!
Sorry for bumping the thread but... They don't sell splenda in Israel and I was wondering if there's anything I can use instead of that. And if not, will one cup of sugar(!!!) (I don't care about calories that much right now) make it sweeter than it should be?

As a sugar substitute you can try to find some stevia. Its made from the stevia plant, it's all natural, and tastes pretty good. Here is some info. on it.
The only problem I've found using it is that it doesn't dissolve very well, but for the PB cookies it should work fine.

You should be able to use any artificial sweetener, but adjust the amount based on that sweetener. For instance, Splenda is a sweetener that measures the same volume as sugar: 1 cup Splenda is a substititute for 1 cup sugar.
If you can find Equal or Sugar Twin for baking, which also measure the same as sugar, that will help with the texture of the cookies. If not, just use the sweetener's equivilent to 1 cup sugar. The texture of the cookies might change, but the sweetness will remain about the same. You'll just need to experiment.
As to substituting actual sugar, they will taste fine and not taste too sweet. But, they will no longer be Adam's Diet compliant. If you can get sugar alcohols for baking there, you can try those, too.
I had to try this recipe out last night. I didn't have any splenda, so I had to use my emergency stash of equal packets, and I decided to add a serving of vanilla whey protein. I messed up the measuring when I was putting the cookies on the sheet so I ended up with 5 huge PB biscuits instead of a sheet of cookies. I had to throw out the biscuits, but they weren't too shabby, I'm sure the cookies are much better.
