Default Number of Sets

I've noticed in some of the training logs on this forum, that some people do 3 sets as opposed to following the 2 recommended sets (at least in Phase 1 - I haven't even looked past it yet!).

Is there a reason why?

in stage 1 the first 4 workouts for A and B are 2 sets each and the last 4 workouts for A and B are 3 sets each.
