Default Healthy banana bread?

I posted this in the "healthy recipe" section but I don't think anyone ever goes in there, lol. I have some bananas that will be over-ripe very soon and want to make some banana bread... but I'm looking for a way to make it that's fairly healthy... anyone have any good recipes hidden away that I could use?

Here is a recipe for banana split bread that I modified from another recipe that was REALLY bad for you!!!!! This one isn't so bad. I sometimes make this for the kids to have for breakfast.

When my bananas start getting to ripe I peel and freeze them. They are perfect to put in protein shakes...in fact I just put half of a frozen banana and a cup of cottage cheese in my food processor and it tasted GREAT, like banana ice cream! I did add a little vanilla extract and one packet of splenda. Yogurt would probably work good too if cottage cheese is not an option.

OOh! Now that sounds like a fantastic idea! I have some cottage cheese left over from some pancakes I made this weekend, and since I hate cottage cheese by itself, this woul be a good use for it... thanks so much!

I love this recipe. I got it from rice-candy.com, but she has since taken her site down. I use it all the time as a protein-ish snack when I'm working out.


Banana Bread Loaf
1 loaf = 10 servings/slices
I love love love to toast the slices and slather on some fake butter product, sugar-free preserves, or peanut butter!


Stats: 190 cals, 7.1 g fat (35%), 1 g sat fat, 18 g carbs (33%), 2.9 g fiber, 15 g protein (32%)


Wet:
3 ripe bananas, mashed
¾ cup Splenda granular for baking
½ cup applesauce
½ cup egg substitute, or 4 egg whites
1 tsp vanilla extract

Dry:
½ cup whole wheat flour
¼ cup almond meal (if you can’t buy this, you can make your own by grinding up almonds in your blender or food processor)
½ - 3/4 tsp baking powder
1 tsp baking soda
½ tsp salt
5 servings protein powder (I used All The Whey unflavored or Vanilla)
½ cup chopped almonds/walnuts


INSTRUCTIONS:
Preheat the oven to 325 degrees Fahrenheit. In a medium bowl, beat the egg whites, and add the remaining wet ingredients – mix thoroughly. In another bowl, mix the dry ingredients. Then lightly blend all of the ingredients together, and pour the mixture into a loaf pan coated with non-stick cooking spray. Bake for 35 - 40 minutes, or until a toothpick comes out dry. Let the loaf stand in the pan for 10 minutes, then slice and serve.
You could also bake these as muffins and shorten the baking time to 20-30 minutes.



This is another recipe I adapted from the same recipe, and is also yummy:
Protein Pumpkin Bread

per slice: 168.5 Cals, 2.7g fat (.6g sat), 21.1 g carbs (2.2g fiber), 13.2g protein

1/2 c apple sauce
1/2 c egg substitute (or 4 egg whites)
1 t vanilla
1 1/2 c canned pure pumpkin (not pie filling!)
1/2 c splenda brown sugar blend

1/2 c whole wheat flour
1/4 c almond meal (you can grind your own in a food processor)
5 scoops protein powder (I use vanilla flavored)
1 t baking soda
1/2 t baking powder
1t cinnamon
1/2 t ginger
1/4 t nutmeg

Preheat the oven to 325F. Combine the first group in a bowl and mix until blended. Combine the second group in another bowl and blend. Add the dry ingredients to the wet and mix thoroughly. Pour into a greased 9"x4" loaf pan. Bake for 45-50 minutes, until a toothpick inserted into the center comes out clean. Cool for 10-15 minutes in the pan before removing. Makes 10 servings.
