Made these this afternoon with some modifications regarding my pantry  :
-Ground quinoa flakes instead of whole wheat flour
-Coconut fiber flour instead of soy flour
-No splenda (luckily, because they are SWEET without it too)
-No vanilla
-Real eggs (eggbeaters just doesn 't exist in Belgium)
Springbean, thanks a lot! They are very tasty! Had two cookies post-workout with a cup of coffee. Mmmh!  Well, not the ideal PWO snack, but I HAD to try them!
Maybe I will try later to substitute the sugar for something else, because that 's an ingredient I would like to avoid...

White Chili with Cauliflower
For some reason I'm in a crockpot mood. It's sometimes a little tricky making a dinner for just two people, but this one can be halved quite nicely. I did that the other night, leaving half the beans and green chilis in the fridge until tonight. The original recipe called for 4-oz of cream cheese, which I cut out, and since I didn't have jalapenos (1-2 in orig) I used a homemade canned hot sauce (which is pretty much jalapenos, a few other hot peppers, vinegar and horseradish).
1 tbsp vegetable oil
2 onions, finely chopped
4 cloves garlic, minced
1 to 2 jalapeno peppers, minced (hot sauce used - 1 tbsp)
1 tbsp cumin seed
1 tbsp dried oregano leaves
1 tbsp chili powder
1 tsp salt
1/2 tsp cracked black peppercorns
1 can, 19-oz white kidney beans, drained and rinsed
3 cups vegetable stock (used chicken)
3 cups cauliflower flowrets (pre-cook for 4 mins - oops, I didn't do this)
1 green bell pepper, cut into strips
2 cups monteray jack cheese, shredded (I used a bagged cheese blend, only 4-oz)
4oz cream cheese, cut into 1/2 inch cubes, optional
1 can (4.5 oz) chopped mild green chilies, optional
finely chopped green onions, optional
finely chopped cilantro, optional
In skillet, heat oil over medium heat. Add onions and cook until softened. Add garlic, jalapeno peppers, and seasonings. Cook, stirring, for 1 minute. Transfer mixture to slow cooker stoneware. Add beans and stock and stir to combine.
Cover and cook on Low (8-10 hours) or on High (4 to 5 hours), until hot and bubbling.
Stir in cauliflower, green pepper, monteray jack cheese, and cream cheese and chilis, if using. Cover and cook on High for 25 to 20 minutes, until green peppers are softened and cauliflower is heated through. Ladle into bowls and garnish as desired.
(If you prefer a thicker chili, mash some or all of the beans before adding.)
Okay, as typing it up I realised why my cauliflower needs closer to 45 mins to cook. But it's quite good cooked in the crockpot. Information (based on 4 servings) with only the chilis added for the optional ingredients, based on 4-oz of cheese (6 is probably closer to 2 cups).
Calories: 360 (23 g protein, 15g fat, 39g carbs)
When I put the cauliflower in I also put in smoked chicken and turkey sausages as well (need more protein!), just kind of pushing them down into the chili.

I tried this tonight and it was awesome! My husband couldn't believe that I made a muffin in 5 mins (from scratch!). He said he didn't know that I was preparing miracles tonight.
I really liked this, but I might try to lower the calories a little bit by using an egg white in place of the whole egg and see how it goes. I used 2 T of whole seeds and ground them, and I might have to back off on that as it was a little too dense - but super filling (and on the big side). I used half a scoop of BSN Choc coconut powder. It was okay, but more of an aftertaste than anything, so I will be using vanilla next time. Either way, an awesome recipe! Thanks

I don't know about "correct eating" LOL BUT...
I had this major craving for carbs ya know? So I am like I only have so many macros left today. So I remembered hearing somewhere that you can make "frosting" out of whey by adding a smidge of water.
So I added a couple of scoops of whey and a little water and mixed it up and smeared my pancakes with it in a stack, 3, and topped them with blueberries simmered in water with a dash of cornstarch.
Anyhoo it was fine! I was thinking, if you "needed" a frosting for muffins or something or ever the protein pancakes, this is an easy way to add more. I was shocked!

I use the above recipe and just leave the butter out (for convenience) and I can't really tell a difference.

I can't WAIT to try some of these, especially the cookies... my sweet tooth is trying desperatley to be sated.
One of my family's favorite healthy recipes is this Green Chili:
1 quart ff chicken broth
1 chopped onion
2 lbs. bl/sl chicken breast
2 pkgs your fave chicken gravy mix (Try Knorr)
21 oz. mild diced green chilies (or 3 cans)
6 cloves garlic
1/2 C. chopped fresh cilantro (NECESSARY!)
1/2 tsp. cumin
2 chopped jalapeno's
28 oz. can hominy, drained
Some ff sour cream and diced tomato to garnish
Calories 343Calories from Fat 18Total Fat 2g Saturated Fat 0gSodium 0mgTotal Carbohydrate 41g Dietary Fiber 0gProtein 36g
