It says you can do 2, 3, or 4 workouts a week, as long as you do them in order. So it sounds like rest days in between are fine.
I just started Strength 1 myself, and I plan to do it 3x per week, Mon, Wed, and Fri. If that works okay for a week or two, I might try 4x per week, Mon, Tues, Thurs, Fri.
