Default Completed FLII, what next?

Have now fully recovered from that awful flu, and completed FLII, I am contemplating what to do next. I realize no one can answer what next, but I have a few concerns. The main concern is doing the Strength programs. I exercise at home, with my wife. She is simply not strong enough to be an effective spotter in those high weight, single rep exercises. How much of the benefit of doing the Strength program would I lose if I did a lower weight and, say 3-4 reps. That would seem to defeat the entire purpose of the "wave-loading", but, hey, at 61 I am happy gaining some strength, even if this modification would mean not maximizing strength. The alternative is HTIII, as we have completed HTII (my favorite so far). I don't even want to think about FLIII for awhile.
We work out 3 days a week, and walk on the other days. Having just read Alwyn's T-Nation article on the Hierarchy of Fat Loss (thanks Lisa~), I am wondering what kind of HIIT training we could do on the days we walk. Would running hard for one minute, then walking for two minutes be HIIT? Or is it more tied to heart rate? For how long (total time) would I do this HIIT? We usually walk for about an hour, not leisurely, a fast pace, but nothing like HIIT. Would I do HIIT for an hour? I can't imagine that.

I'd suggest you go with Strength II and not do the wave loading of Strength I for the reasons you mentioned. But S-II would get you into 4 x 4, which would be heavier and fun for you. That program has rep ranges from 3 to 12. Those are pretty enjoyable rep ranges IMO.
