I've never tried the jacknobber, but it makes me think of the theracane because it's just a smaller, harder surface that will get into the muscle deeper. I also need a lot of pressure to work on the knots around my scapulae. I use a baseball, but I just happen to have a lot of baseballs around my house because my son plays that sport. I think if it's working for you, then it's all good.
As far as your shoulders being constantly elevated, I would suggest starting by working your shoulder depressors. Do prone Ys for time and lower trap raises. See if those exercises bring you some relief. Also, just awareness of your posture and correcting it as often as possibly throughout the day.
