Default Joe's Special

This is a filling and versatile recipe.

Joe's Special

4 servings
1 tbl butter or olive oil (I use a half and half mix)
1 chopped onion
4 oz mushrooms or more if you like (baby bellas work great)
1 lb lean ground turkey (I use the 93/7) or lean ground beef (I use the 95/5)
1 bag spinach
2 cloves garlic, smashed or chopped
6 eggs, lightly beaten

Saute the onions and mushrooms in the butter until a light golden brown or until well softened. Add the ground turkey and cook until no longer pink. Add the garlic & bag of spinach and cook until the spinach wilts. Add the eggs and cook until firm-salt & pepper to taste. I usually add a good splash of hot sauce.

For an Asian twist I will add ginger, sesame oil & soy sauce. Sometimes I make the basic recipe and pour a little marinara over it and a sprinkle of parmesan. It is a mild recipe that stands up well to whatever seasonings you like. Oh and it's great leftover for breakfast.
