Default ricotta breakfasts :)

I was recently talking to Roland about how bland ricotta tastes to some people. Since putting it in lasagna won't exactly work for most of us here, here are my two favorite simple ricotta recipes.



BLACKBERRY VANILLA RICOTTA DELIGHT

You need:
4 oz ricotta cheese
handful blackberries
2 tbsp plain yogurt
1/2 tsp natural vanilla extract
5-6 cut up dried cranberries
5-6 cut up peeled almonds

Mix all and enjoy. If you let it sit in the fridge for an hour the nuts will soften up and taste amazing. You can use blueberries instead of blackberries, it is just as wonderful.

ASIAN PEACH RICOTTA DELIGHT

You need:
4 oz ricotta cheese
1 peach, peeled and mashed up
1/2 tbsp honey
dash nutmeg
dash turmeric
5-6 chopped up cashews

Mix all the ingredients and enjoy after keeping in the fridge for 10 minutes.

Oh I LOVE Ricotta and make what I call an Italian Salad!

It is just the best!

Ricotta whole milk ~1 serving 62 gms
chicken 85gms
spinach/sweetbaby lettuce
roasted: mushrooms, broccoli, tomato, redbell peppers
brocolli stalks cut up ~100gms
olive oil 1 tbsp
olives
fresh garlic
redwine vinegar
italian season to sprinkle on
garlic powder
salt and pepper

I put all the ingrediants in the salad except the veggies ( I pre-roast them) and chicken, heat them up and add on top of the ricotta (already on top of the salad) then last add the redwine vinegar on top and cut up and eat!

When I make it, come out to around 400 cals 25-30 carb, 30pro, 17fat
