Default Cotija cheese is awesome

I had never had it before and I was excited to see that it's not only good on top of meat and veggies, but it also cooks very well, as well as halumi cheese and it has a great simple flavor.

Just made some quinoa with cotija, apricots and pine nuts. They mix wonderfully.

I was going to suggest you try the red quinoa (cause I like it more) but I see from your link that you do too

The red is less bad than the regular stuff. Less slimy and more nutty.
