My favorite uses of avo are:

Added to a turkey sandwich -- you can mash it in place of a condiment

Simple guac: mash one with one clove of garlic, a diced tomato and maybe some lime juice.

The BLA: Bagel (whole wheat of course), Lox and avocado in place of cream cheese

Put some brown rice or shredded chicken in the hollow left over from removing the pit, dress with a little salad dressing and eat.

Just mashed on toast with a little season salt

sliced or diced into green salads
in sandwiches or wraps, smashed or in slices
as guacamole
sliced with a little salt & pepper
BLTA: regular BLT sandwich but add avocado
in shakes
as condiment for bunless burgers

I agree with all of these suggestions!

I like my avocado as simple as possible: sliced with a little bit of olive oil, black pepper and garlic powder. I eat it with rye bread or with pita!

I've always tried avocado shakes that I like quite a lot as well!!!

Yea I have really enjoyed avocados in place of a spread on my sandwich.

Barrett,

Good point! I forgot that one.

Truthfully, I love avocado and I'm happy to incorporate them as much as possible!

Аvocado is awesome with some feta cheese, green onions, sun dried tomatoes, and black olives. You can use it to stuff deviled eggs or as a spread or dip

testsherpa - I love a turkey avacado sandwich, and guac rules.

Another way I eat them is half it, remove the shell and pit, and fill the halves with a can of tuna. Throw some red pepper flakes on there, and you're good to go.

I love avocado and eat it just about daily on my grilled chicken or tuna sandwiches. Another favorite lunch is a can of tuna mixed with some cottage cheese, diced avocado, red onion, cilantro and southwest seasoning blend.

I haven't tried this recipe yet but I have it bookmarked: http://www.epicurious.com/recipes/fo...ressing-238224

Lately I've also discovered warm avocados are delicious too. The other day in a restaurant I ordered a baked avocado salad - it was half of an avocado, baked and sliced, served over a bed of sauteed spinach with olive oil and garlic, diced tomatoes, some parmesan cheese, all drizzled with balsamic reduction. I also tried a recipe for mahi mahi baked in avocado-yogurt puree that was delicious - I'll be adding it to my blog very soon.

hmmm here's a good recipe for Avocado

Avocado and Papaya Salad recipe

Ingredients:

2 large avocados.
1 small papaya fruit.
1 ruby red grapefruit.
1 small head of lettuce.
2 tablespoons of olive oil.
1 tablespoon of lemon juice.
Salt and black pepper, to taste.

Preparations

Peel the avocados and the papaya, then remove the pits and seeds.
Cut the fruit into one inch pieces and mix them together in a suitably sized bowl.
Using a sharp knife, peel the grapefruit, then segment it, removing the thin membrane from each of the segments.
Cut the segments in half then add to the fruit mixture.
Wash the lettuce and break into leaves.
Place the the leaves on a platter and put the fruit mixture on top of them.
Whisk the olive oil, lemon juice, salt and pepper together in a suitably sized bowl to produce the dressing.
Drizzle the dressing over the salad.
Serve.

This is really good and very healthy as well ...
