Default If you were a box of apple spice muffin mix....

And you wanted some pumpkin in your life, what do you guys think--one can of pumpkin puree? Half a can? I have to cook something for Thanksgiving and I suuuuuuuuuuuuck at cooking desserts and breads. If I can't use the microwave or the Foreman grill, it's hopeless.

Trader Joe's has pumpkin bread/muffin mix (just a thought)
otherwise - what kind of liquid does the box call for and how much?

I'm guessing you have the pumpkin and the apple spice muffin mix?

Easiest - follow the instructions on the box. Most of them ask you to add water, oil and eggs. Swap equal amount of pumpkin for the oil and leave the other ingredients alone. You might need to reduce the baking time a bit.

Something using much more pumpkin would probably require more experimentation.

1 can (14oz?) of pumpkin
1 box of spice cake mix
4 TBS water

Mix the ingredients in a bowl until smooth (no powder left), and then put a heaping spoonful into greased muffin tins. It should fill each space about halfway up. You can make 12 huge muffins or 16-18 smaller ones.

Bake @ 350* for 25min.

Take out, let cool for a bit and then put on a cooling rack to finish cooling.

These are REALLY good and super easy. I got the recipe from my sister-in-law who apparently got it from weight watchers.

The final recipe: just subbed some pumpkin for oil. Maybe a little bit too much pumpkin, but it was incredibly moist.

Thanks for all the suggestions. Don, I will definitely try your recipe next time, looks incredibly easy.
