Default Shepherd's Pie



Ingredients

4 potatoes (24 oz), cubed (you can remove the skin if you prefer)
1 tbsp butter (I use real butter, because it doesn’t have all kinds of additives)
1/4 cup skim milk
salt and pepper to taste

16 oz 96/4 ground sirloin
1 tbsp olive or coconut oil
1 onion, chopped
3 carrots, chopped
3 cloves of garlic, minced
1 cup mushrooms, coarsely chopped
1 tbsp Worcestershire sauce
1 (10 oz) package of peas
2 tbsp whole wheat flour
1 (12 oz) Guinness beer
1/4 cup low sodium beef broth
1/4 tsp salt
1/8 tsp black pepper
1 tbsp thyme, dried
1 tbsp sage, dried
pinch celery seed
1 egg white, beaten
4 tbsps green onion, finely chopped (garnish)

Directions
Bring a large pot of water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and mash. Mix in butter and skim milk. Season with salt and pepper to taste. Set aside.

Preheat oven to 375° F.

In a large pan, add oil and saute onions, carrots, and garlic, at medium heat until tender but still firm. Add mushrooms and saute for 1-3 more minutes, or until browned. Move veggies over to one side of the pan, and add ground sirloin to the other side (so the sirloin has its own room to groove) and Worcestershire sauce. Break up the meat into bite -size pieces as it browns. Once meat has browned, add peas and cook for 1 minute. Pour in beer, beef broth, Worcestershire, and spices. Bring to a boil, reduce heat and simmer until beer and beef stock have reduced. Sprinkle in flour and continue to cook until sauce is desired thickness. If too thick, add a little more beef stock, a tablespoon at a time until sauce is thinned out to your liking.

Spread the sirloin and veggie mixture in an even layer on the bottom of an approximately 9x13 inch baking dish or 4 individual ramekins. Top with the mashed potato mixture and brush with egg whites.

Bake for 20 minutes, or until golden brown. Remove from oven and sprinkle with green onion.

Edit: Add 16 oz 96/4 grould sirloin to the ingredients list above. Not sure what happened, but it disappeared from the list!

I think your protein count is off. Like Leigh I love shepherds pie so I'll try this recipe. Thanks for posting.

Man, I was asleep at the wheel when typing this one up. That would be one hell of a protein packed meal!! Ha. Thanks for the catch!

Edit: Protein is actually 36 g per serving.

Someday we are going to have to have a cook-off, Bobby Flay style! I am going to just show up one day and surprise you when you least expect it.

I fixed the P and added the meat for you.

Looks really good. My kids love shepherd's pie. Hopefully, it will less than 93 degrees next weekend, and I can use the oven!

With the new expansion coming out that might not be as cheap as you'd think.

I love shepherd's pie too, and will definitely consider this recipe when I go to make one (as I've never made it before).
