Default Scallops Provencal

My local grocery store had a one-day seafood sale and I picked up 4 lbs of huge scallops. So, last night I made this dish and got to use some of my fresh tomatoes and herbs from my garden. It was delicious!

Scallops Provencal

2T olive oil
1t minced garlic
2t fresh thyme, chopped
1T fresh basic, chopped
1 lb large sea scallops
2 medium-sized Roma tomatoes, diced (I used a bunch of grape tomatoes, cut in half)

In skillet, heat oil over medium heat. Add garlic, thyme, basil, and scallops. Saute scallops for 2 minutes on each side or until golden brown and just cooked through.

Stir in tomatoes, salt, and freshly ground pepper and saute for an additional minute.

This recipe stated that it served 4, but I made it into 2 servings because I was looking for a lot of protein. I also cut back on the EVOO a bit to save on calories.

Well, I was running low on calories remaining for the day, so I just had some steamed broccoli. But, I think it would be great with some brown rice or couscous, or pasta. It was so good, I think I'll have it again tonight!

Hey, LD, I was looking at this recipe again last night and they suggest serving it with

-- lightly steamed green beans with lemon juice
-- plenty french baguettes
-- a good chardonnay

I must admit, that would be good, but could not make it fit into my macros/cals no matter what....well, except for the green beans

Mmmmm scallops...I actually have some grape tomatoes...just need the scallops....this looks soooo good! Just bought green beans today too... Thanks for sharing it Jane!

I made this last night and it was a hit with the family (husband, 11 yo and 9 yo). It was super easy to make and tasted awesome! This recipe is definitely a keeper. Thanks for sharing, Jane!

How coincidental that you bumped this today, as I just took scallops out of the freezer to make this tonight! Glad you liked it!

(I just noted in the original recipe in my first post, I have "basic" as an igredient. I hope everyone figured out that it was supposed to be BASIL!)

You had a great dinner then! I was searching the site for Barilla Plus and ran into your Great Grilled Shrimp. I am looking forward to trying that recipe after my weekly Friday grocery run.
