Default Great Grilled Shrimp

I sort of made this up and it was GREAT! This is for one serving, so adjust accordingly.

6 large shrimp - peeled (150 grams I used)
1/8 cup olive oil
1/2 T tomato paste
4 drops tabasco
2 T lemon juice
1/2 T fresh chopped oregano
handful of fresh chopped italian parsley
1 clove garlic chopped
salt and pepper to taste

Mix together marinade ingredients and throw in the shrimp. Refrigerate for an hour or so.

Then:

2 oz Barilla Plus multi-grain pasta
1/4 cup canned diced tomatoes
6 cherry tomatoes
a shakeful of red pepper flakes
3 T or so of fresh basil

When shrimp is done marinating, get the grill ready. While the grill is getting ready, start the water for the pasta. Boil pasta and drain. Put the rest of the stuff back in the pan and bring to a simmer. Add back in the pasta.

Thread shrimp on skewers (this was easiest for me) and grill over direct heat (covered grill) for 2 minutes per side. Remove.

Throw shrimp in with the pasta and tomatoes and serve! YUMMY!!!!!! Tasted like I was at a great restaurant. It's got a kick to it!

Notes: I used all fresh herbs from my garden, which really makes a difference. Most of the marinade gets left behind, so the EVOO isn't as bad as it looks. I may even tweak those measurements next time. Once my tomatoes are ripe, I'll use all fresh tomatoes, too. This fit in really well with my macros today. Nice nutrition on that Barilla Plus pasta and it tastes great.

I'll give this a shot this weekend. Sounds yummy.

I guess I better get myself a grill.
