Default Healthy Cheat Pizza

I have this once a week as a cheat meal. Although as pizza goes it has some healthy ingrediants.

Boboli (thin or wheat crust)
marinara sauce
red peppers sliced
raw spinach
ground flax seed (sprinkled on the crust after the sauce goes on)
cheese (low fat)
turkey sausage or turkey pepperoni.

Just follow the cooking directions for the crust you're set.
Eating this pizza, I've actually lost my taste for full fat pork sausage and pepperoni.

I've seen recipes online for mini-pizzas that use Thomas' Light English Muffins as the crust. They're supposed to be high in fiber, and they also have high-fiber and multigrain varieties to pick from.

Add a little sauce, low-fat cheese (I hear non-fat doesn't melt so well), and whatever toppings you want and toast in the oven.

That looks awesome; I bought the stuff for it this weekend and am gonna try it out tomorrow. I am gonna grill up some chicken to use instead of the pepperoni though. So chicken, red pepper and portobello mushrooms, YUM!

I've had good results using breaded & baked eggplant rounds in place of a bread crust. It's like eggplant parm, improved by toppings =) I usually salt and rinse the rounds to get rid of some of the water, but I recently read a recipe where the blogger pre-cooked some zuke rounds on a George Foreman to dry them out a bit before using them in a gratin-- so I may try this next time, since that sounds effective and then you get bonus grilled flavor.

Then dip in an egg wash (or whatever you like best) and bread with seasoned panko. I pre-bake until a bit crisp, then add cheese & toppings and bake till bubbly.

Hungry Girl (hungry-girl.com) says to use crushed up Fiber One bran cereal instead of breadcrumbs in a lot of recipes. I intend to try it next time I need to bread something.
