I'm on a cuke roll lately but you can only eat so many cukes & vinegar. The garden is getting ready to put out a gazillion cukes soon, too. Got any (healthy-ish) cuke ideas?

I'm going to leave that aspect of this conversation to you ladies so that I can keep what good reputation I have remaining.
On a serious note, a friend of mine has some relative he's talked about (uncle or aunt, perhaps) who makes their own pickles, but they are apparently absolutely killer pickles, with lots of different flavors, spices, tastes, etc. He has said that it's not at all like eating pickles, but different types of crispy flavored cukes/veggies.
Sorry I don't have specific recipes, but maybe searching some pickle recipes, rather than simply cuke recipes? The more I think about it, that sounds pretty darn tasty.
Just had this last night and it was YUMMY, I promise:
Cucumber Soup by Galya, my bulgarian sista from another mista
2-3 cukes, mostly peeled, grated
handful of pecans but she usually uses walnuts
garlic to taste, chopped
fresh dill to taste, chopped
a large container of plain yogurt (12oz?)
a bit of olive oil
2-3 cups of water
Combine the first five ingredients. Stir in the yogurt with a bit of olive oil (about 1/4 cup). Start adding water until the consistency it to your liking.
She also suggested making this a spread: Squeeze out most of the water from the grated cukes and then combine them with the nuts, garlic, herbs, 1/2 yogurt and 1/2 sourcream. This can be spread onto a pita chip for example or celery sticks.

This is one of my favorites.
Slice cucumber. Mix with equal parts soy sauce and sesame oil. Add crushed red pepper flakes if you like spicey. Sprinkle with sesame seads.
Mix finely diced cucumber, finely chopped tomato, and diced onion. Add a minced fresh jalapeno or serrano chile. Salt & pepper, fresh cilantro, and juice of one lime. Eat with Indian food. Delicious.

Here's my hubby's Aunt-from-Athens' recipe for Tzatziki:
Shred cukes, squeeze out juice (you can get all fancy with cheesecloth, I just pick it up and do it with my hands) (them perverts better not comment on that one)
mince garlic, add to cukes
Add thick yogurt to taste. The greek stuff at TJ's is perfect, if it's a calorie thing, use the nonfat, it works fine.
I can't give you exact measurements, I don't cook that way. I've been using these little persian cucumbers lately so I will use 3 to about a cup of yogurt. They're very small. I use 2 cloves of garlic, but that may be too much for some. Add salt to taste, if you like dill you can add some of that.
I love the stuff. You can put it on a sandwich, or use it as a dip. I use it in catering and everyone always raves. : )
