Default OMG DELICIOUS. Chix breast stuffed w goat cheese

YUM. Husband made me this last night--

4oz chicken breast(S)
1/3 oz chevre (goat cheese) per chicken breast
1-2 tsp olive oil
roasted garlic (peel off white husk, stick it in oven at 350x1 hr, mush garlic juice into cheese before stuffing)
sea salt
pepper

saute breasts in olive oil in pan until seared on each side. STuff breast w goat cheese/garlic mixture, salt and pepper to taste. Put it in a 350 degree oven x 20-25 mins. Eat.

Holy.
Cripes!

Stats (approximate, depends on oil amt):

200/breast
F 9g
Pro 26 g
CHO 3 g

sounds wonderful! on the weekend I saw one of the cooking shows make chicken breasts as follows.
salt & pepper. brush top with honey-mustard. spread with softened goat cheese. top with crushed pistachios. bake.
Now I'll have something different to do with the leftover goat cheese (other than salad).

There's similar recipe in one of the South Beach cook books. They include wilted spinach in the stuffing, and I like to throw in some pine nuts. It's a household favorite.

If you're going to roast garlic, just cut the tip of the bulb off, drizzle some olive oil on it and then bake it. You can just scoop out the roasted stuff instead of peeling.
