can of packed pumpkin (not the pumpkin pie filling)
1.5 Cups of Egg White
1 tsp of Maple Syrup
Cinnamon and Nutmeg to taste
3 Scoops of vanilla protein powder (although I had to sub in a scoop of Butter Cream toffee dymatize because I ran out of vanilla)
Mix Pumpkin, Egg Whites, Maple Syrup and Spices together until fairly smooth. Add PP and mix until well combined.
Heat Griddle until sizzling hot and spray with a bit of pam. pour 2/3 cup of batter onto griddle and cook like a regular pancake (mine were about 8 inches in diameter - if you want a smaller pancake use 1/2 cup to ladle batter onto grill). Flip when top begins to look set and almost dry.
Great with a tbsp of Natty PB and berries on top.

Also wrt cooking with protein powder... I keep hearing that it de-natures the protein to cook with the stuff. What do you think?
Just regular old pumpkin - no extra ingredients in the pumpkin which is what pumpkin pie filling has.
As far as denaturing goes... every protein you cook denatures to some extent - this is what causes the whites in eggs to change color as they heat and meat to become firm when you cook it. I don't think it's that big of an issue in the grand scheme of things.

Denaturing doesn't affect the amino acids or the peptide bonds between them.
Acid denatures protein (along with heat, think ceviche) so if you consume un-denatured protein it will denature in your stomach before it is absorbed in your intestine.
Paula..........Thank-you soooooooooooo much for this recipe! The pancakes are awesome! I didn't top them with anything......I just ate them right out of the pan......lol
The best part is I had ordered some BSN Dessert Whey protein powder in the Cinnamon Roll flavor because it got good reviews at another board. I love the taste, but there's something in it that makes it really thick and I just can't drink it like that........so, I made the pancakes using this and they were awesome. Now, I know how I'm going to use up the remainder of that PP without it going to waste.
I did 1/2 cup scoops and got 7 very big pancakes (big for me....about a 7 inch diameter). According to my custom recipe that I put in at FitDay (weighing everything by grams), each pancake is about: 105 calories; 2g fat; 9g carbs; and 15g protein.
