Cottage Cheese "Ice Cream"
I've been playing around with my ice cream maker. With my kids, I make regular stuff, but when they're gone, I experiment.
Here's my latest. I like it, but I love cottage cheese. It might be an acquired taste, you know?
Chocolate Bourbon "Ice Cream"
Makes 2 servings
2 cups large or small curd cottage cheese
2 eggs
1 tbsp light olive oil
1 tbsp bourbon
4 tsp cocoa powder
1 tsp vanilla extract
3 packets of Spenda
3 packets of Equal
Put all this stuff in the blender and blend until VERY smooth, then blend a little more. Then, do what you do with the ice cream maker to make it into ice cream.
It was pretty good right out of the machine. Perfect texture, just like soft serve ice cream.
Per serving: 377 calories, 22g Fat, 8g Carbs, 1g Fiber, 33g Protein, 3g Alcohol

I too like cottage cheese, and will give this a try. One question: why use both splenda and equal? I have splenda at home, but not equal. Thanks!

I guessing the logic on the sweeteners is this: sweeteners tend to have a synergistic effect - e.g. it might take 10 packets of one type to get the sweetening effect of 3 packets of each type.

It seems like you have to use less when you mix two different sweeteners. I have to use 7 or 8 of one, 6 if you mix two of them.
Also, you detect the aftertastes less. Although, my way DOES have more Equal aftertaste than Splenda alone...
Original tip, tkinsley, but I also read about it in a Q&A about why some diet sodas (Coke Zero) use two sweeteners.

Seriously. I always use an equal AND a sweet and low in my coffee, tea, whatEVAH... if I just use one or the other it's never right.
