Mushroom Stew- another low-carb option
Another great one.
2 teaspoons olive oil
4 minced garlic cloves
2 cups shitake mushrooms sliced ( you can sub white button mushrooms)
2/3 cup chicken broth
2 cups sliced mushrooms
1/4 canned crushed tomoatoes
1/4 teaspoon dried marjoram leaves
1/4 teaspoon salt
1/8 teaspoon fresh ground black pepper
2 tablespoons of chopped fresh basil.
In large skillet, heat oil, add garlic and cook over medium heat 1 miniute. Stir frequently. The add shitake mushrooms and broth, cover and cook 3 minutes. Stir in mushrooms, cover and cook 4 minutes. Stir in everything else but the basil and cook uncovered for 4 minutes. Finally, stir in the basil and serve.
