Default Veggie Quesadillas. Delicioso!!!

2 cups broccoli florets
1 and 1/2 cups skin milk
1/3 cup and 2 teaspoons of all purpose flour
1/2 cup thawed whole kernel corn
1/4 cup chopped red bell pepper
1/4 cup green chilies
1/2 teaspoon of salt
1/8 teaspoon of ground red pepper
1/4 cup fresh chopped cilantro
4 flour tortillas

Cook broccoli in boiling water for 2 minutes, drain, and set aside.

In sauce pan, whisk milk and flour over medium heat for 5 minutes. Stir in corn, bell peppers, chillies, salt and red pepper.

Remove from heat and stir in cilantro and broccoli.

Preheat oven to 425 and spray bakibg shhet with non-stick cooking spray.

Spoon mixtures onto tortilla and fold in half.

Bake on baking sheet for 8 minutes or until hot and bubbly.

These are really healty and delicious. Hope you like.

I know I know. I thought the same thing. It's definitely not you stereotypical mexican quesadilla, but it still really tasty. Keep an open mind and I think you'll be surprised.

Made these for breakfast for the next two days, very good, thanks! Added a little sour cream and salsa on top.
