Default Feta & Spinach "Sauce"

I made this up today as I was dreading the thought of eating chicken yet again. I used this as a low carb sauce to pour over it. I've used something similar to make a pasta sauce for refeed before.

200g low fat ricotta cheese
5g butter
a little water
70g low fat feta cheese
couple of handfuls of spinach

Melt butter in sauce pan, and then stir in ricotta cheese. Add a little water so the mixture is more smooth (but not enough to make it watery). Add in half the feta cheese and the spinach. Stir until spinach is soft and add the last bit of feta cheese before pouring over chicken.

This makes quite a lot so you could half the recipe for one chicken breast. With the brands I use, it gives at least 30g protein and barely any carbs!
