Default Leftover Steak - ideas??

ok, time for my bi-annual post, anyone got any decent ideas for steak? Got a decent amount of London Broil, sliced nice and thin, and would like to take it for lunch. I can do the salad thing, but was hoping for something a little more creative (that I obvioulsy can't come up with).

You could put it in a wrap with salsa, veggies, avocado, ect. That works well, if you're into that kinda thing.

cut it into bite size pieces, along with raw, grilled, or blanched vegetable. Use some sort of dip for some flavor. You can eat it hot or cold.

Here's the gist of what I do. I just wing it,usually.

1 tbsp peanut butter
1 tbsp soy sauce
a few drops sesame oil
artificial or natural sweetener to taste
water to thin to desired consistency
green onion, minced (optional)
cilantro, minced (optional)

or, like my kids use...

I ended up cooking it off more, it was still a little pink, and putting it in a food processor. Shredded steak. I put it in an omlette, and later a quesadilla. No waste.

I also do steak wraps with left over steak, but I put an Asian twist on it. I just throw together some lettuce, whatever veggies I have left over in the fridge (cucumbers are my favorite) and the steak in a large bowl. I then toss it all with an asian style salad dressing. You can add those crunchy asian noodles in you like. Wrap it up in a tortilla and your set to go. It's really delicious and simple to make.

Steak fajitas are what I usually do...We have some sort of wraps in the fridge all the time, cut it up with some onions and green peppers, some cheese, salsa, tomatoes, non-fat sour cream and you are golden!

I thought of another one. What about the good ole fashioned steak sandwich. Cut the steack into thin slices and use ut as your sandwich meat. Sounds simple, but it's soooo good. It a nice change from the usual turkey. I personally like mine with spicy mustard, lettuce, tomotoes, and onion. My brother loads on the mayo, but if you're trying to go the healthy route, might not want to over-do the mayo.
