Default Healthy Hungry Man's (or woman's) Goulash

Okay I just finished this one and am going to log it while I have all the ingredients. It turned out amazing.

This yeilds 5 huge servings. Each serving has 404 cal, 9g fat (no trans fat) and 32 grams of protein.

1 big sweet onion
1.25 pounds of ground turkey
2 cans of whole peeled tomatoes in juice
1 bottle of Trader Joes traditional marinara sauce
1 8 oz box of elbow noodles
1 16 oz bag of frozen vegetables

in one pan cooke noodles until just slightly soft (they can be undercooked). Rinse and set aside

slice up the big sweet onion and throught it in a fry pan. Add the turkey and cook until just brown.

In a BIG kettle add the 2 cans of tomatoes and their juice. Add 2 cups of water. Add the marinara sauce. Add the vegetables. Add the ground turkey and onions and the elbow noodles. Simmer for 1.5 hours on low. I added some ground pepper but found it needed nothing else so this make this a fairly low sodium meal as well.

I love ground turkey. Protein filled and I love the taste even more than lean ground beef.
