Default TRY SOMETHING VEG

Being vegetarian has brought a lot of pitying looks from my friends. They promise I have missed out on a great deal. Little do they realize that I was a non vegetarian obese person with a lot of ailments and had taken to vegetarian because of some advise from well meaning friends. I discovered this great vegetarian cuisine –the Indian cuisine and never regretted for remaining vegetarian. It is they who are missing out on quality life. Some of my favourite Indian Food Recipes are :

Khoya Mutter (Khoya can be bought in the Indian store. It is a milk product or else you can use Tofu, a soya milk product)

Ingredients:

2 cups green peas, boiled 100 grams khoya
1 large finely chopped tomato A pinch of asafoetida
2 cloves of garlic 2 green chilies (finely chopped)
1/2 tbspcoriander powder 1/2 tsp.dry ginger powder
1/2 tsp.garam masala powder 1/2 tsp.ginger, finely chopped
1/2 tbsp.chili powder 2 tbsp.ghee (clarified butter)
For the garnish: Chopped coriander

Method: Heat the Ghee(clarified butter) in a tava (griddle).Add the asafetida, cloves and khoya and fry on a slow flame till the khoya becomes reddish brown.Add the peas, the green chilies, the remaining spices, 1/2 cup of water and salt and cook for 5 minutes.Add the chopped tomato and cook again for 2 minutes.Garnish with coriander.
Serve hot.

Crispy Bindi fry

Ingredients:
200gms Bhindi ( okra)
50 gms Onion (Sliced)
2 tsp.chopped green chilies
1 tsp. Chaat Masala
1 tsp.Cumin Seeds
2 tbsp.Coriander leaves (chopped)
Salt and red chilies according to taste Oil for Frying.

Method: Cut bindhi (okra) into thin long slices and deep fry till crisp and golden. Heat oil and fry onions till golden brown and keep aside. Deseed green chillies and cut them.Serve hot with roti, puri, or paratha. Heat little oil in a frying pan and add cumin seeds, green chillies and bindhi and all other ingredients. Fry till crisp. Garnish with chopped coriander leaves. Serve hot.

I love Indian food. And, despite how much meat I do eat, I actually used to eat a lot of vegetarian foods, too. I've had a few veg relatives, and had to make sure they were taken well care of during the holidays. I might have to try this when I get back from Virginia.

I don't eat peas. Do you have a suggestion for something that would be good in it's place? Diced squash or eggplant, maybe?
