Default Peanut chutney

1 cup peanuts
3 medium sized garlic cloves
1 green chilli ( for people who are not afraid of HOT ) (it's optional)
1/2 tsp sugar free sweetner ( we have a brand here called "Sugar Free". You can use any equivalent)
Salt as per taste

Blend all these together with little water to make a smooth paste.

Seasoning:
Heat 1/2 teaspoon oil in a skillet. Splutter 1/4 tsp mustard. Cool and add to the paste above. Also add 1 tsp of finely chopped cilantro/coriander.

You can eat it just like that or spread on your bread. Yummy..

Good idea.. never tried that. I will, I have loads of it in the refrigerator right now.

I'm going to have to try this one!...I'm thinking that I may try it with grilled shrimp.

We should have dinner at Ruma's house.

Ruma, every Indian restaurant here sells a spinach dish called Saag Paneer. I could eat 5 gallons of it. Do you ever eat or make this dish? Just how bad is it for me? Does it have 3 pounds of butter in it? It tastes pretty rich. I'm wondering whether I could make a light version.

You may want to take your words back after learning I am not a person adept in making tasty dishes.. I make them healthy not tasty. Don't even get me started on how my Mom and MIL do not like the taste of the dishes I make and how they do not make any attempts to be polite about it.

I make saag paneer (the lighter version). The ones you have at restaurant are made with lots of creme. I will PM you a lighter version.

Thanks, Ruma!! Just forward me your entire Indian Lite cookbook.

I knew the saag paneer I was ordering tasted too rich to be "healthy."

My roommate of many years ago before I was married was from India (Kashmir). He made a chutney of walnuts, radishes, garlic, and many hot peppers. I picked up a fair amount of Indian cooking just drinking beer in the kitchen with Shahid while he cooked, but I never made that recipe. So I don't know the proportions, but it was delicious. He died a few years ago so I cannot ask...

Thanks. I don't know if the chutney is actually Kashmiri. But the ingredients are all things I want in my diet, so I would love to have the recipe.
