Default Got a Chicken Carcass? and Cauliflower

If you have the makings of a good poultry broth do it. Strain it, then add a few vegetables - onion, celery, a can or two of tomatoes.

Then cut up a head of cauliflower add it and cook until the cauliflower is soft and has a very mellow taste. I then use a stick blender and totally puree everything.

Then add diced red pepper for color, a can of corn, maybe some halved black olives. Add any leftover poultry meat, or cut up a chicken breast or two.

Finish with butter or cream as you serve each bowl.

A big pot of this lasts us for a couple of dinners, occasional lunches, and for me a break from eggs for breakfast.

Mmmm... carcass...

I always call dibs on the carcass at major holidays.
