Default Great Granola Bar!

Well, it's a great granola bar if you can deal with the fact there's no granola in it.

I'm currently on a kamut kick, so I took a granola bar recipe I found on the net and substituted kamut (puffed kamut) and bran (the buds) for granola and oats. I was also out of almond extract so that got canned. And I used olive oil instead of vegetable oil. (Actually, I found it absurdly difficult to find a recipe that didn't call for about a cup of oil.)

The result it beyond yummy. I was even thinking I could throw some protein powder in there next time for good measure. I'm sure there are tons of variations.

I really recommend trying them if you have the time or inclination.

Ingredients:
• 1 1/2 cups kamut puffs
• 1/3 cup honey
• 1/4 cup almonds, finely chopped
• 1/4 cup bran
• 1 tsp olive oil
• 1/4 tsp almond extract
• 1/2 tsp vanilla extract
• 1/2 tsp cinnamon


Directions:
1. Preheat oven to 350 degrees
2. Combine kamut, bran, cinnamon, and almonds in large bowl mixing well
3. In another bowl mix oil, honey, vanilla extract, and almond extract
4. Pour liquid mixture over dry mixture, stirring together thoroughly
5. Press mixture onto baking pan in rectangle 7x9-inches
6. Bake 12 minutes
7. Cut into bars
8. Bake an additional 3 to 5 minutes, until golden
9. Place on wire rack to cool

Those look pretty good.

I'd never thought of cooking with puffed kamut before.

When I have cereal, I often add in some puffed kamut. I can never get enough cereal and those things are so big and puffy and low calorie...

The protein powder might be a good idea. Let us know how it works out.

sounds good. I'll have to try it with some protein powder too...taking a trip next couple of weeks and will need some road food.

I've recently tried puffed millet...like LD says, pretty cool because what looks like a big portion is mostly air and about 10 carbs, with some fiber. They're not very crunchy, though, so I thought about toasting them first.

After making a few batches of these, I recommend using a little more honey than recommended if you are using the puffed Kamut. It doesn't seem to stick together that well. Or you can just crush up the puffed Kamut and use the amount recommended.
