Preparation Instructions:
Use one bundle of fresh collard greens (about 15 stalks); wash thoroughly and remove stalks from leaves. In a large nonstick pot, fry the turkey bacon in 1 tbsp butter for about 5 minutes. Add 1 cup water, bring to a boil, add washed collard greens, cover and simmer on medium-low for 20 minutes. Remove lid, turn heat to medium-high, and let most of the water evaporate. Add salt and fresh ground pepper to taste.

I made up a recipe very similar to this and love it. It is really good with Kale too.

Nice - I didn't know New Englanders appreciated good southern food

I've used mustard greens for it before, too. I love it - it reminds me of the real deal (made with pork bacon), which you can't eat unless it's together with cornbread cooked in an iron skillet.

I love greens. I just made mine with beet greens.

Added a medium red onion, a tsp of red pepper flakes, and 1 tbsp red wine vinegar at the end. Apple cider vinegar would have been better, but what are you going to do?

And, to think, all these years, I've been tossing out the beet greens.
