Default Wild Salmon Salad

This one turned out great - just finished some for lunch with a salad.

Wild Salmon Salad

Ingredients:

SALMON, ATLANTIC WILD – 1 large can (14.75 oz), drained & bones/skin removed
PICKLE, DILL – 2 small, diced
MAYONNAISE, CANOLA, LIGHT, EGGLESS – 1/4 cup
LEMON JUICE - 1 tbsp
SOY SAUCE (KIKKOMAN) - 1 tsp
CAYENNE PEPPER - 1 pinch
FISH RUB* – 1/2 tsp, or to taste

Instructions:

Drain the can of salmon, put into a large mixing bowl, and remove the larger bones and skin. Add the remaining ingredients and stir with a wooden spoon until thoroughly mixed. Store in the fridge in an airtight container for up to three days.

Makes 3 servings.

Nutritional Information, per serving.

Calories – 260
Protein (g) – 29
Carbohydrates (g) – 2
  • Fiber (g) – 0.5
Fat (g) – 14
  • Saturated Fat (g) – 1.4
  • Monounsaturated Fat (g) – 6.4
  • Polyunsaturated Fat (g) – 5.0
    • Omega-3 (g) – 2.5
    • Omega-6 (g) – 0.7
*Use your favorite pre-mixed fish rub, or mix together the following: thyme, oregano, mint, fennel seed.

That's what I had for lunch(es) today! Sounds better with your extra spices. Normally I just do the mayo. Today added some chopped bell peppers and green onion. Sometimes sprinkle sesame seeds in too.

I like to wrap it up in sushi nori and eat it like a roll.

Good idea with the sesame seeds! Those would go great with the soy sauce.

Nice idea for some added flavor. I usually just end up with pickle and mayo for my salmon salad.

I've been using the salmon in a pouch instead of canned. It seems to have better texture and you don't have to pick out the skin and bones. The sodium content is a bit of a concern, though.

Bones are probably good for you, but not 'good enough' to eat 'm if you don't like them. Costco canned salmon is probably the best from an aesthetic point of view, tastes OK too.

Had a friend on the state fish promotion board or whatever it was called. Always asked her why tuna usually looked better in a can than salmon did, most people were turned off by the skin and bones.
